So it’s perfect for Meatless Monday or for a Friday during Lent. And if you skip the Parmesan cheese, it’s actually vegan too. So this Black Bean and Kale Pasta can please almost everyone.

Black Bean And Kale Pasta

What You’ll Need:

  • 1 medium onion
  • 1 can black beans
  • 1/2 bunch kale
  • 3 cloves garlic
  • 1 pound pasta
  • Pinch of salt
  • Olive oil
  • Parmesan cheese

What You’ll Do:

Boil the pasta according to the package.

While that’s cooking, heat the olive oil in a pan. Slice the onion and garlic and begin cooking them down, about five minutes.

Drain and rinse the black beans. Add them to the pan. Cook about five minutes.

Pull apart the kale into small pieces and add the kale to the pan with a pinch of salt. Cook down about five minutes.
